Our Story
High Altitude Hops began as a home kitchen experiment — a fascination with how altitude changes fermentation, how whole grains behave differently at 5,000 feet, and how patience transforms simple ingredients into something worth waiting for.
Today we operate from our kitchen on East Estates Circle in Larkspur, baking small batches daily and sourcing from Colorado farms and mills. Everything we make is from scratch — no shortcuts, no preservatives, no compromises on technique.

48-hour fermented loaves — country, olive, seeded, and rye. Our starter has been alive since day one, and you can taste the depth in every slice.

We mill our own flour blends and source stone-ground grains from Colorado mills. No bleached flour, no chemical conditioners — just pure grain flavor developed through slow fermentation.
Baking at 5,000 feet means lower atmospheric pressure changes how dough rises and how moisture evaporates. Our recipes are calibrated for this — not copied from sea-level manuals.
We partner with nearby farms for dairy, eggs, and produce. When the season changes, our menu changes with it. That is how it should be.
